Why a Stoppage Here Is a Food-Safety Event
In most factories an outage costs output. In a processing plant it can cost the batch. Chillers stop, room temperature climbs, and product that was compliant an hour ago becomes product you have to justify or condemn. Then there is the line itself: a chain hoist stalled mid-rail, birds left on a shackle line, or a conveyor stopped with product on it. Every one of those needs hands on it before anyone restarts, and the clean-down that follows eats a shift. Backup sized to hold the chillers and finish the hanging stock is cheap against that.
What to Keep Energised First
Covering the whole site is rarely economic and rarely necessary. In priority order, what matters is the refrigeration plant serving chillers and freezers, extraction and air handling over the boning and packing halls, the chain and conveyor drives that let you clear or park product, the steam or hot water supply for sanitiser, and the monitoring layer that produces your temperature records. Rendering, offal handling, yard lighting and the office block can wait for a generator. If you only protect one thing, protect the refrigeration compressors and their controls, because product temperature is the clock you cannot rewind.

Washdown, Cold, and Where the Bank Lives
Two environments in one plant pull the specification in opposite directions. The production side is washed down nightly with high-pressure hot water and caustic, so anything mounted there needs a genuine ingress rating and a standoff that keeps it out of the spray envelope. The chiller side is cold and damp, and cold is the harder problem for most chemistries: lead-acid loses a large share of its capacity below freezing, which is exactly where you would site it if you were not thinking. Lithium iron phosphate holds up far better, but a battery located in a cold room still wants a heated enclosure and a charge regime that will not plate the cells. Put the bank in a separate ventilated room, run for the washdown rating, and size the heater as a load on the bank itself.
Sizing Against Restart, Not Running Load
The number that decides whether this works is not the sum of your nameplate ratings. It is the inrush when three refrigeration compressors and a bank of extraction fans restart together, on top of whatever stayed live through the transfer. Give your supplier the largest simultaneous motor start you can construct, not the average draw. Under-sizing here is the single most common failure in food plants, and it only shows up on the day it matters.
What to Ask a Supplier
Ask for the continuous rating and the ten-second overload rating as separate figures, then ask which motors the overload figure was verified against. Request usable capacity at your lowest expected ambient temperature rather than at twenty-five degrees. Ask what the warranty says about a high-cycle standby duty in a humid, washdown environment, and whether the supplier has commissioned in a food plant and can point to the hygiene documentation that followed.
