Few products punish a power interruption as quickly as chocolate. Temper is a crystal structure, not a setting you switch back on, and a conche that stops with mass in it can set harder than the gearbox wants to move again. What an Interruption Actually Costs

Start with the tunnel. Moulded product moving through a cooling tunnel needs a controlled descent through specific temperature bands; stop the refrigeration and the profile breaks, and the result is bloom, poor snap, and a pallet that either gets reworked or gets written off. Then there is the conche and the melanger, which run thick mass for hours and are expensive to restart cold. And there is the enrobing line, where tempered chocolate in circulation will solidify in pipework and pumps if the trace heating or the jacketed tanks lose their supply. None of these are quick resets, and the clean-down after any of them is measured in hours of skilled labour.

Why Sodium-Ion Suits a Warm Plant

Confectionery halls are deliberately warm in places and unavoidably warm in others, and that is the condition that ages a lot of battery chemistry early. Sodium-ion keeps a wider usable window at high ambient than lead-acid, which starts losing service life quickly once a room sits above about twenty-five degrees. It also copes well with the partial-state-of-charge duty that a standby bank actually sees, and it does not carry the supply-chain exposure that makes some buyers nervous about lithium for a non-critical application. Cycle life at depth of discharge is more than adequate for an application that discharges hard a few dozen times a year.

What to Keep Live, in Order

Protect the product and the ability to restart, in that order. That means tunnel refrigeration and its controls, the jacketed tanks and trace heating that keep tempered chocolate mobile, conche and melanger drives or at least their lubrication and controls, the tempering machines themselves, and the batching and weighing controls that hold your recipe. Wrapping, cartoning, and the warehouse can wait. A bank sized for the thermal side of the process is a fraction of one sized for the whole factory, and it is the one that prevents the write-off.

Where the System Goes

Siting is mostly about two things: heat and sugar dust. Keep the bank out of the tunnel exhaust plume and away from the tempering room’s heat load, in a ventilated space that is not itself part of the warm process envelope. Sugar dust behaves like most organic dusts once it is airborne and is conductive when it picks up moisture, so a sealed enclosure with the right ingress rating and a separate room are worth more than the capacity you would gain by squeezing the bank into a corner of production.

What to Ask a Supplier

Ask for usable capacity stated at your worst-case room temperature, not at twenty-five degrees, and ask how the chemistry behaves when a conche and a tunnel compressor restart within a few seconds of each other. Request the continuous and short-term overload ratings separately. Ask what the warranty says about a standby duty in a warm, dusty environment, and whether the supplier has commissioned in a food plant before.
